भाग- 21 “सिलबट्टा VS मिक्सर ग्राइंडर”

खरड़…खरड़.. अगर आपके घर में भी खाना बनाने से पहले ये मधुर आवाज़ आती है तो इसका मतलब, आपका जीवन बिल्कुल देशी अंदाज़ में चल रहा है जो अन्य लोगों की तुलना में काफ़ी बेहतर है । खरड़ खरड़ की यह आवाज़ पत्थर के सिलबट्टें की होती जिस पर मसालों को प्राकृतिक रूप से पिसा जाता है । आजकल इन सिलबट्टो का स्थान आधुनिक मिक्सर ग्राइंडर ने ले लिया है जो चुटकियों में मसालों की खाल उधेड़कर हमारे सामने रख देता हैं और खाना जल्दी से तैयार हो जाता है लेकिन रुकिये! इन दोनों से तैयार मसालों के बीच काफ़ी फ़र्क़ होता है जो आपको समझना चाहिए । ज्यादातर लोगों को तो बस यही मालूम है कि मिक्सरजो है वह सिलबट्टा का विकल्प मात्र है, जिसे मिक्सर ने रिप्लेस कर दिया है लेकिन वास्तव में ऐसा है नहीं । निसंदेह मिक्सर खाना बनाने में काफ़ी सुविधा प्रदान करता है लेकिन बदले में हमें पुरानी चीजों के स्वाद और सुगंध के साथ समझौता भी करना पड़ता है ।
मिक्सर ग्राइंडर:- इक्कीसवीं सदी के आगमन के साथ ही घर घर में सिलबट्टें कम और मिक्सर ज़्यादा होने लगे क्यूँकि इनमें बहुत कम समय में मसाला तैयार हो जाता है वो भी बिलकुल बारीक या जैसा हम चाहे, लेकिन इसके लिए बिजली की ज़रूरत होती है और इस्तेमाल में यह बहुत आवाज़ करती हैं । साथ ही देखभाल के अभाव में जल्दी ख़राब भी हो जाती हैं। सफ़ाई में भी थोड़ी सी कमी रह जाए तो बदबू भी देने लगती हैं । हर चीज़ के सकारात्मक और नकारात्मक पहलू होते है । मिक्सर के मामले में सुविधाएं बहुत अच्छी हैं लेकिन फिर भी यह आधुनिक जमाने के कई लोगों को सिलबट्टें से दूर नहीं कर पाया है ।
सिलबट्टा:- पत्थर के सिलबट्टे में मसाला पीसने पर हमें मसालों की प्राकृतिक ख़ुशबू ज्यों कि त्यों मिलती हैं जो खाने का जायका बढ़ाने का काम करती हैं । दूसरी बात इसमें प्राकृतिक और धीमी गति से मसाला पिसता हैं तो ये गर्म नहीं होता और मसालों के गुण बरकरार रहते हैं। सिलबट्टें के यह गुण, एक अच्छे खाने के लिए बेहद ज़रूरी होते है । हालांकि इसके नुक़सान की बात करें तो नुक़सान कुछ भी नहीं है केवल इसमें समय थोड़ा ज़्यादा लगता है लेकिन बदले में बदन की कसरत वाला फ़ायदा भी देता है । इसके अलावा यह बेहद सस्ता होता है और बिजली पर निर्भरता भी नहीं रहती है ।
आधुनिक जमाने के कई घरों के इंसान तो शायद सिलबट्टें के बारें में जानते भी नहीं होंगे लेकिन अगर आप ये ब्लॉग पढ़ रहे हैं और सिलबट्टें के बारे में जानकर जिज्ञासा पैदा हुई हो तो एक बार सिलबट्टें के मसालों और चटनी का आनंद ज़रूर लें और जो सिलबट्टें के बारें में अच्छे से जानते हैं लेकिन आधुनिकता के फेर में इसे त्याग चुके हैं, और उनके खाने में भी प्राकृतिक स्वाद और सुगंध नहीं मिल रही है तो आइए , फिर से कुछ क़दम पीछे चलते हुए सिलबट्टें के लिए अपने घर में थोड़ी जगह दे और रोज़ ना सही,कभी कभी ही इसका इस्तेमाल कर पुरानी यादें ताज़ा करें ताकि देशी स्वाद और इसके गुण हमें जीवन का सही आनंद दे सकें।
